Cranberry Orange Coconut Cookies
I am inclined to say that I can’t bake, but that isn’t really true at all. I just don’t bake. I can certainly cook, although I rarely do because my husband loves to be in the kitchen. I have been wanting to bake more, however, as I consider baking to be feminine and sexy and love having control over the ingredients my family is ingesting.
I recently stumbled across this Cranberry Orange Coconut Cookies recipe at and aside from it looking delicioso, one of the ingredients was coconut oil. I’m in the process of reviewing Tropical Traditions coconut oil for a variety of uses, so I considered it a sign.
During this project I remembered another reason I do not bake – It’s messy! I loathe measuring things like flour.
I would like to try this with all coconut oil rather than the suggested half coconut oil half butter – They could be more coconutty. I might increase the amount of coconut flakes as well. Using dried cranberries, the berries on the outside of the cookies got a bit tough but are tasty nonetheless.

These cookies are fairly dense but are still lighter than most cookies. Their soft and crumbly texture reminds me of peanut butter cookies and I recommend they be devoured while warm. Rather than milk, serve with orange juice.
I really enjoyed these cranberry orange coconut cookies and I may try to make them a holiday tradition.

I am going to make this for the million +1 holiday parties we have to attend and bring something. This is perfect because I have all the ingredients. I am a HUGE TT fan!
I miss my Grandma’s Christmas Bun (fruitcake…but not the kind that people re-gift. Hers is moist and full of Jamaican rum)
I tried this because we had the ingredients on hand too. The couple things we had to go out and get were items we buy regularly anyway. I hate buying specific items just for one recipe.

I haven’t baked in ages but now I’m tempted to start again. The last time were failed “healthy” oatmeal cookies.
